
Morning Smoothie
1 cup of fresh or frozen fruits - banana, strawberries, mango, pineapples, blueberries, melon, and or apple
1 cup of low fat milk or orange juice or ½ cup low fat yogurt + ½ cup low fat milk
1 tbs. honey
Optional – 1 tablespoon of finely grinned flaxseed
Place all ingredients in a blender and puree until smooth
Blueberry-Orange Pancakes – Adapted from Parents Magazine
Ingredients
l cup all-purpose flour
½ cup whole wheat flour
½ cup sugar
3 tsp. baking powder
¼ tsp. salt
1/3 cup skim milk
1 container plain low-fat yogurt
½ cup orange juice
2 eggs
1 tbs. canola oil
1tbs. vanilla extract
1 cup fresh or thawed blueberries
Directions
1. Combine the flours, sugar, baking powder, and salt in a large bowl and stir to mix well. Combine the milk, yogurt, orange juice, egg, oil, and vanilla in a medium bowl and whisk until smooth. Add the yogurt mixture to the flour mixture and stir until a smooth batter forms
2. Heat a large nonstick skillet over medium-high heat. Spoon batter by 1/4 cup measures onto griddle, spreading to a diameter of 4 inches. Sprinkle about 1 tablespoon of the blueberries (5 or 6 blueberries) onto each pancake. Cook until bubbles appear on surface, about 2 minutes. Turn and cook until underside is lightly browned, about 1 to 2 minutes longer.
3. Optional – make a sandwich from 2 pancakes and peanut butter.
Tiny Pizzas
Ingredients:
1 standard-sized bagel, cut in half
tomato sauce
shredded mozzarella cheese
toppings like diced green pepper, chopped onion, or chopped tomato (whatever you like)
seasonings like oregano, basil, and pepper
Directions:
Prep time: about 15 minutes
1. Set the oven to low heat, approximately 350°F.
2. Spread tomato sauce on each bagel half.
3. Sprinkle the shredded cheese all over the tomato sauce on each half.
4. Add your favorite toppings.
5. Put a light sprinkling of seasonings on each half.
6. Put your bagel halves on the baking sheet.
7. Bake in the oven on low heat for about 5 to 8 minutes. You'll know they're done when the cheese is bubbly.
8. Let cool for a minute and enjoy!
Serves: 1
